Paletta Biellese is a gastronomical speciality of certain quality and great effect, in the local tradition. The most prized parts of piedmont pork shoulder are used in its production and using ancient recipes it is seasoned with berries, herbs and aromas. It is kneaded by hand daily for about a month and is checked thronghout every phase of its maturation. Cooking procedure: Dip the "Paletta" in a saucepan with abundant cold water and hang it by its cord from a wooden spoon, so that it does not touch the bottom or sides. Bring to boil and then substitute the water (already hot) and continue cooking for two hours. It can be an alternative to the usual meat dishes if served hot, or sliced when cold.
